Chocolate Pudding Cookies

I'm really not one for packet mixes when it comes to baking. I'm a "from scratch" kinda gal... however, when such a mix finds itself unused following a recent Hello Fresh delivery... one must get creative.

The use of packet mixes lives in my peripheral rent free, particularly one involving cookies... so cookies is where I went. The trend for thick and full cookies has come to the fore in recent times and that pursuit for the right amount of thickness is something I feel the need to challenge myself with frequently. Too thick and it's basically a pie or entirely other dessert, in my opinion. I want my cookies full but manageable when it comes to the eating part.

As to these chocolate pudding cookies, I was intrigued to see how they would turn out. Beautifully chocolatey, cakey, and fudgy.

My children ascribe the finished result to a mix of chocolate fudge cake and brownie. Basically, yum.

So, without further ado, here's the recipe...

Chocolate Pudding Cookies

Ingredients:

226g unsalted butter (at room temp) 250g soft brown sugar 2 eggs (cracked into a bowl) 2 tsp vanilla extract 1 packet chocolate pudding mix 2 tsp bicarb/baking soda 2 tbsp cornflour Pinch of salt 313g plain flour Chocolate chips - milk and semi-sweet

Preheat your oven to 180 C (350 F). Line 3 large baking sheets.

Cream together butter and sugar in your stand mixer fitted with a paddle attachment.

Add eggs and vanilla extract and mix till smooth.

Slowly add in the pudding mix, baking soda, cornflour and salt and mix on low for 1 minute.

Turn mixer down low and add in flour.

Stir in chocolate chips - I used a combination of dark and milk chocolate chips as well as some roughly cut chunks of Dairy Milk.

Scoop cookie dough onto three prepared baking sheets and bake one at a time for 9-10 mins. Leave to cool... then enjoy! Makes around 15-20 cookies depending on how large your scoops are.

Store in an airtight container for up to 3 days.
