Donut Diva

Donuts have been on my baking to do list for ages and look, these are a bit of a cheat as they're not the real, yeasty, thrown in oil variety but they provided a good intro donut making!

My friend bought me a silicone donut mold and if that wasn't a sign to get on it I don't know what was! So, here goes, the easiest donuts you'll ever make! I made one batch plain and the second batch I coloured (as per the picture) - they're pretty diverse little treats so just have fun with them.

For the donuts:

120g plain flour 70g caster (granulated) sugar 1 tsp baking powder 1/2 tsp salt

Whisk the dry ingredients together in a large bowl.

28g unsalted butter (melted) 1 egg 100ml milk 1 tsp vanilla extract

Whisk the wet ingredients together in a small bowl and then add to the dry ingredients and whisk until smooth.

Spray your silicone donut mold with cooking spray, I used olive oil spray, then pipe the batter into the mold but not all the way to the top of each ring. Bake in a preheated oven at 175°C for around 8-10 minutes.

For the glaze:

80g icing (powdered) sugar 1/2 tsp vanilla extract pinch of salt

Whisk together and then slowly add a tablespoon of milk to create the glaze. Add your choice of food colouring and stir until smooth.

Dip the warm donuts face down into the glaze and leave the set on a wire rack face up. If you're adding sprinkles do it straight away as the glaze sets quickly.
