How'd you like them apples

I love making macarons, especially during the autumn/winter months when none of that nasty summer humidity wreaks havoc with their resting time. For my latest batch I decided to invest in some Lorannoils and try flavouring my shells with something other than vanilla. With an order for turquoise macarons I went with the apple flavour and naturally they needed a complementary filling.
So I put a twist on my Grandma Pamela's traditional stewed apple to create a flavour rich in apple and cinnamon...


Recipe (bear in mind this was quite the improvisation based on what I like and my childhood memories):
1 tbsp unsalted butter 1 apple (peeled, cored and diced) 1/2 tsp cinnamon 2 tbsp brown sugar 1/2 tbsp water
Method: Melt butter in a small saucepan, then add the rest of the ingredients and simmer over a low-med heat until the apple is soft and tender. You can then either mash it into a stewed apple consistency or blitz it with a hand blender depending on how you like it. You will then be stirring it into your buttercream as per the image above right.
Et voila, the most delicious macaron filling you will ever try!
