Queen's Meringue Powder

So I'd seen all over social media that Queen Fine Foods had brought out a whole new range of products ($4.50 per box available in Coles and Woolworths) including the pictured meringue and pavlova powder mix.

Now any experienced baker knows the nightmare that is copious wasted egg yolks in the pursuit of various egg white-based treats - meringue, macarons, meringue-based buttercream... I could go on. So the discovery of a product that could save me on the egg front for at least one of those treats and I had to give it a go.

Plus it is literally as simple as 'just add water'! Into the mixer it went with 125ml of water, whisked on high until stiff peaks formed and ...that was it!! Done! Meringue!

I did forget to add a drop of vanilla extract but the reception from my kids was a big thumbs up on the flavour front!

I coloured mine a few different colours and got creative with some funky meringue pops in the style of @thepurplecupcake and I'm pretty darn happy with the results!
