No Bake Cheesecake

Super simple and delicious no bake cheesecake coming right up... and unlike so many of the recipes I've come across, this one has no need for gelatin so vegetarians rejoice!
My Dad's favourite cake is cheesecake so I've made a few variants over the years, baked and not and I love both versions equally. I keep seeing the cutest mini desserts doing the rounds and I thought why not try my hand at some myself and what better cake to mini-fy than cheesecake!
So what will you need:
For the Biscuit base 85g Digestive biscuits (or any biccie of your choice within reason) 25g melted butter
Chuck the biccies in a food processor and grind to powder (or pop them in a sandwich bag, seal and bash with a rolling pin - excellent anger management therapy with a sweet treat at the end!
For the Cheesecake Filling 225g Cream Cheese 100g Caster Sugar 1 tsp Vanilla 240ml heavy cream
Combine the creamcheese and sugar in a large bowl and beat with a handheld electric mixer. Add your vanilla. Whip the cream to soft peaks (be careful with this as you don't want to over-whip and risk it curdling). Fold into the creamcheese mixture, half at a time. At this point you can add your flavourings if you want something other than traditional cheesecake... anything from lemon zest to melted Biscoff spread, or my favourite, melted chocolate!
Pour into your individual ramekins, glasses, dessert cups etc and refrigerate for a minimum of 1 hour or 2-3 days.
